Strawberry Pretzel Salad-Gluten Free edition!



I love to show love through cooking for others. My favorite, is cooking/baking desserts! I know, I’m not supposed to be a bad influence, but this recipe is a summer must have!


I am a firm believer that a recipe like this one is fine every once in a while, and in small portions. In our traffic light eating system, this would be a “red light” food, so keep that in mind when adding this one to your menu for the week.


Okay, now that we got the formalities out of the way, I’ll get to the recipe. This is sure to delight those friends and family members who have to eat gluten free, as they have to miss out on this dessert if you follow the classic Betty Crocker version that has been around forever.

Ingredients:

Topping:

1 pkg 8 serving Strawberry JELL-O

2 cups boiling water

32 oz of ripe fresh or thawed strawberries (chopped)



Crust:

2 cups of Gluten Free Pretzels, crushed (I use Glutino brand)

¾ cup melted butter

3 tablespoons of sugar


Filling:

1 container (8oz) Cool Whip, thawed

1 8oz pkg of cream cheese, softened

1 cup of sugar

Directions:

Step 1: Dissolve gelatin in boiling water. Stir in strawberries; refrigerate until partially set, about 1 hour 45 mins.

Step 2: Heat oven to 350 degrees F. In medium bowl, mix crust ingredients. Press into ungreased 13x9 inch baking dish. Bake 10 minutes. Cool on cooling rack.

Step 3: In medium bowl, beat filling ingredients with electric mixer on medium speed until smooth. Spread over cooled crust. Cover and refrigerate until cool and gelatin in bowl is partially set.

Step 4: Carefully spoon gelatin topping over filling. Refrigerate 4 to 6 hours or until firm. To serve, cut into 4 rows by 3 rows.


Makes 12 servings in 13/9 in pan: 465 calories, 41g carbs, 34 g fat, 2g protein.

Now I must say, this is a favorite for our family, even the one’s who don’t have to eat gluten free. They don’t even know the difference. I hope you enjoy it as much as we do!!
